Harmonising an old wine as Ramos Pinto 30 Year Old Tawny Port, which are full of personality and character, is not an easy task. In the tasting room, decisions are very difficult. There nature gives place to knowledge, to a serene and wise wine, which, like a kind old man, tells grandiose stories to the young. Earthly passions give way to volatile, esterified, wood-scented ambiences, free from the schist, from the redness. It is a dive into an ethereal, limpid world, performed at the unique and constant rhythm of a Port Wine Cellar.
Winemaking:
Ramos Pinto 30-Year-Old Tawny is produced by the traditional Port method. The hand-picked grapes are destemmed and crushed before fermentation at controlled temperatures, with skin maceration to extract tannin, colour and flavour. The addition of grape spirit at the ideal moment sets the balance between the wine's sweetness and bouquet. The moment of fortification is chosen by the winemaker following strict control of fermentation temperatures and densities according to the vine variety, maturation stage and the final sweetness required. After the harvest, the wines remain in the Douro until the following spring, when they are taken to Vila Nova de Gaia and enter Ramos Pinto lodges for ageing in oak wood casks. The final blend results from a selection of wines between 9 and 38 years of age, composed to maintain the consistency and character of this Ramos Pinto 30-Year-Old Tawny Port.

Ramos Pinto's 30 year old tawny port is a delicate wine, one that has gained many times in complexity what it has lost in weight. Its flavour flows by the mellow red fruit's aromas to the oak ageing aromas as the hazelnuts and walnuts, dried apricots and citrus fruits, honey. It's an absolutely extraordinary this Port wine with 30 year old age.
Store and Serve Advice:
The bottle should be kept upright, protected from light and humidity, at a constant temperature of 16ºC-18ºC. It is ready for drinking and does not require decanting. Once open, it should be consumed within 2-3 weeks. Serve between 12ºC-16ºC.
