For this Kopke Reserve Ruby Port the grapes were pressed and the fermentation took place at controlled temperature with a pre-maceration. When the wort reaches the desired sweetness value, the fermentation is interrupted by the addition of brandy, and later aged in French oak barrels for an average period of 2 years plus 5 years of aging in the bottle.
