Winemaking:
After the maturing of the grapes, the selection is made at the harvest and then transported to the winery. After total destemming and slight pressing, the grapes are subject to a reduction in temperature and then to a process of clarification of the must. Part of the must is then fermented in French oak vats and another part of the must is fermented in stainless steel vats at a controlled temperature of 16 ° C. After a maturation in fine lees with periodic bâtonnage for several months, the wine stems for 12 months in bottle, before being released on the market.
Grape Varieties:
Chardonnay, Sauvignon Blanc
