Availability date:
Tapada do Chaves winery stands as a patrimony, standing on the slope of the Serra de São Mamede, near the town of Portalegre, in the highlands of the Alentejo. It is an emblematic place, is under a granite massif and at a generous altitude that allows the slow and full maturation of the grapes, which reflects in very pure aromas in the wines and a unique freshness for the red wines and white wines of the region. The vines are aged between 15 and over 85 years and are planted with many varieties: Trincadeira, Aragonez and Castelão, among the paints, and Fernão Pires, Arinto, Alva and Tamarez in the white cast. The Tapada do Chaves Reserva red and white wines are old acquaintances of Portuguese wine lovers, but because of their very limited production, they have never become popular. They gained fame in a restricted circle of enophiles in love with classics and great discoveries. To date, the Tapada do Chaves Red Wine is produced according to the traditional method, it still matures in Portuguese oak barrels.
Winemaking:
The grapes were harvested manually. After partial destemming and pressing, the wort obtained was decanted for 48 hours followed by a quickly maceration with the contact of the grape's skin. The fermentation took place at controlled temperature, and the wine was transferred to French oak barrels, in contact with fine lees with regular bâtonnage, for 6 months more 3moths in bottle before launched to the consumption.
