Winemaking:
The grapes, from the Alvarinho variety, were harvested earlier for this batch, manually in small capacity boxes. After pressing, the wort obtained was decanted for 48 hours. The fermentation was then carried out at a controlled temperature using pre-selected yeasts to achieve the desired sweetness and acidity equilibrium and dictated the final alcohol of 9% of this Soalheiro Docil, White Wine, from one of the most reputed Regions of Portuguese Green Wines, Region of Melgaço, Monção.
