Winemaking:
The harvest takes place in the vineyards planted by the Eugénio de Almeida Foundation, in Alentejo, Portugal. The grapes after harvesting are de-stemmed and slighty crushed on mechanical presses. The grapes are then fermented in stainless steel vats at a controlled temperature of 16 ° C. This is followed by a stage under thin lees for eight months with regular bâtonnage in stainless steel vats before bottling.
