After a careful selection in the vineyards and in the cellar, part of the batch of the grapes was fermented in stainless steel vats with a long maceration, and another part of the grapes was fermented in traditional granite stone mills. The final batch was made in French oak barrels and in old oak vats where the monolithic fermentation took place.
